Fritter Time

It's not often that I channel my mother-in-law. I love her dearly, but we are very different people. However, with the number of zucchini we are receiving in our CSA box, I had to pull out the Joan recipes. One in particular, her zucchini fritters, are quite good. Too bad I couldn't find the paper on which I had written it.

And thank goodness for the internet. Smitten Kitchen has just about every good recipe out there, and it didn't disappoint. I won't bore you with the details here.
